Are you a fellow “Curd Nerd”? Have you never met a cheese you didn’t like? From ancient caves to modern creameries, cheese has shaped cultures and cuisines across the globe. This course offers an exploration of cheese—its history, production, varieties, and cultural significance. We will study the fundamentals of cheesemaking and explore different styles of cheeses from around the world. We will sample several different cheeses and learn how to taste cheese, and how to build an interesting cheeseboard with food and beverage pairings. Whether you're a curious foodie or an aspiring affineur, this course will deepen your appreciation for one of humanity’s oldest and most beloved foods.

Leader: Carol Markley is a self-taught cheese enthusiast and occasional home cheesemaker who enjoys sharing her knowledge with others who are interested in learning more about the art of cheesemaking and the vast variety of cheeses out there to be sampled.
