There are ingredients and then there are Ingredients. The difference? An ingredient is basil, tomato, pasta- items that make up a dish. An Ingredient (capital I) is sugars, lipids, proteins- the vital building blocks that make up everything we cook. Over eight weeks we will take an in-depth look at each Ingredient and their qualities to discover how food really works. We will be guided by the work of author Ali Bouzari and his book, Ingredient: Unveiling the Essential Elements of Food and study the book chapter by chapter. Each week we will dive deep into one of the eight Ingredients. Through discussion and hands on experiments in the kitchen, we will illustrate the properties of each Ingredient to gain a better understanding on how each works, alone and in conjunction with other Ingredients. Our goal in this class is to understand how the components of food work, so no matter what your skill level in the kitchen is, you will have a better appreciation how recipes work, and of the food you eat. Using Ali Bouzari’s guide, we will shift our focus from secret ingredients to the secret of Ingredients.
