Level up, bakers! This class is for those that want to dive into understanding and interpreting baker's percentages, expanding their knowledge on maintaining starters, and diving into understanding poolish preferments and desired dough temperatures. Topics we'll cover include:
- Understanding baker's percentages
- Reading and adjusting formulas
- Preferments (Poolish, Biga, Levain)
- Desired Dough Temperature (DDT)
- Strengthening and maintaining mature starters
- Hydration adjustments
- Fermentation timelines
- Troubleshooting dough behavior
You'll leave class with divine-smelling loaves, the recipes, and a passion to keep creating your now-perfected sourdoughs at home.
Note: Although this course builds on the concepts and skills introduced in this semester's beginner's Sourdough class, anyone with moderate baking experience or higher is welcome to sign up.
Ages Requirement: Ages 14 & up. Kids between the ages of 10-13 may enroll with a registered adult.

Community Education Class Cancellation Policy: A full refund will be issued if registration is canceled at least 7 days prior to the start of class. Cancellations made less than 7 days from the class date will not receive a refund unless the class spot can be sold. On the chance that UA-PTC must cancel a class, registrants will have the choice of receiving a full refund or transferring to another Community Education class.
